KORU® Quinoa Squares

Substitute other nuts such as pistachios or walnuts, or other seeds such as flax, pumpkin or sesame. Use peanut butter or ABC (almond, brazil & cashew) butter in place of almond butter

Ingredients

1 cup dried KORU® Apples, diced

1 cup (200 grams) quinoa, toasted at 400F (200C) for 10 minutes

1 cup (100 grams) coconut chips

1 cup (200 grams) almonds, chopped

¼ cup (50 grams) sunflower seeds

1/3 cup (100 grams) almond butter

1/3 cup (100 grams) honey

Method

  1. Place all ingredients, except almond butter and honey, in a large mixing bowl.
  2. Heat almond butter and honey in a small saucepan on low heat, stirring until combined and smooth.
  3. Pour honey mixture over ingredients in mixing bowl and stir to combine.
  4. Spoon the mixture into an 8x8 pan lined with baking (wax) paper.
  5. Cover with another sheet of baking (wax) paper and press firmly with a metal spatula.
  6. Cool in refrigerator, then remove from pan and cut into 16 squares (A pizza cutter works perfect for this).
  7. Keeps several days in airtight containers, or package and freeze for future use.

KORU® Apple Fritters

Serve KORU® Apple fritters layered with whipped cream and drizzled with salted caramel sauce, for an over-the-top rich tasting dessert!

Ingredients

4 KORU® Apples, sliced ¼ inch (6 mm) thick and cored

Batter
1 egg white
1 cup (250 ml) beer
1 cup (150 grams) regular flour
½ teaspoon ground cinnamon
½ teaspoon table salt
¼ teaspoon ground nutmeg

Canola oil, for frying

Sugar topping
2 tablespoons powdered sugar
½ teaspoon ground cinnamon

Salted Caramel sauce for dipping

Method

  1. Whisk egg white in a medium bowl until foamy; add the balance of the batter ingredients and whisk until smooth.  Set aside.
  2. Slice apples with a mandolin so they are evenly sliced.
  3. Pour 2 inches canola oil into a deep cast iron skillet.  Heat until a dot of batter in the oil sizzles.
  4. Dip apple slices in the batter, shaking off any extra for an even coating.  Fry 4-6 slices at a time in a single layer, keeping them separated, about 2-3 minutes on each side until golden brown.
  5. Drain on a plate lined with paper towels and sprinkle with sugar topping.
  6. Serve immediately with salted caramel sauce for dipping.

Cheese & KORU® Toasties

For a vegetarian option, omit bacon

Ingredients

Sandwich Ingredients:
2 teaspoons olive oil
3 medium red onions, thinly sliced
3 pinches table salt (to taste)
Fresh cracked pepper (to taste)
2 teaspoons honey
4 slices sourdough bread
½ KORU® Apple, cored and thinly sliced
4 slices cheddar cheese
4 slices bacon

Dipping Sauce Ingredients:
2 tablespoons regular or light mayonnaise
1 teaspoon rosemary, finely chopped
½ teaspoon dijon mustard
½ teaspoon honey
Sea salt & fresh ground pepper to taste

Method

  1. In a medium skillet over medium heat, heat the olive oil, adding onions and 3 pinches of salt. Stir and cook for approximately 10 minutes, then add honey and black pepper and continue to cook until onions are transparent and caramelized.
  2. While onions are cooking, mix dipping sauce together and set aside.  Place bacon in a single layer on a plate between paper towels, and cook in microwave approximately 4 minutes.
  3. Butter sourdough bread. On each unbuttered side, place 1 slice cheese. Layer bacon, apples and onions between two slices of bread and cheese.
  4. Heat a large skillet on medium high heat and place sandwiches, buttered side to skillet, cooking approximately 3-4 minutes on each side until cheese is melted and outside of sandwiches are crispy and golden.
  5. Serve sandwiches with Honey rosemary dipping sauce and remaining sliced KOUR® Apples.

KORU® Apple Sauce

Try substituting one of these flavorings or one of your choice! Seeds from one vanilla bean, 1/2 teaspoon cinnamon, 1/2 teaspoon ginger powder. Add 1 cup fresh or frozen strawberries, raspberries or blueberries

Ingredients

6 medium KORU® Apples, peeled and diced

1 cup water

2 tablespoons fresh squeezed lemon juice

1 teaspoon ground cinnamon* (optional)

Instructions

  1. Place all ingredients in a large saucepan.
  2. Simmer over medium-low heat, stirring occasionally, for about 15 minutes until apples are soft.
  3. Blend with immersion blender until smooth, or leave somewhat chunky if you prefer.

Experiment with other nuts; add sunflower seeds, pumpkin seeds or flax seeds. For the sweet tooth, add chocolate chips or coconut chips.

Ingredients

1 cup dried KORU® Apples, diced
1 cup (200 gm) pitted medjool dates, chopped finely (a food processor makes this easy!)
1 cup (100 gm) sliced almonds
1 1/2 cup (135 gm) rolled oats, toasted in 350F (180C) oven for 10-15 minutes
1/3 cup (115 gm) honey (or maple syrup)
1/3 cup (86 gm) peanut butter, smooth or chunky (or other nut butter)
16 whole almonds (optional for top)

Method

  1. In a large mixing bowl, combine dried KORU® Apples, dates, sliced almonds and rolled oats.
  2. Place honey and peanut butter in a small saucepan and warm over low heat until smooth.
  3. Pour honey mixture into the mixing bowl and stir to combine.
  4. Spoon the mixture into an 8x8 baking pan lined with baking paper.
  5. Place optional whole almonds on top to decorate bars.
  6. Cover with another sheet of baking paper and press firmly with a metal spatula.
  7. Cool in refrigerator, then remove from pan and cut into 16 bars (A pizza cutter works perfect for this!)
