KORU® Apple Salad in a Jar

Crispy and non-browning, KORU® Brand Apple is the perfect addition to this easy, portable salad!

For a vegetarian option, substitute beans in place of chicken.Use your favorite salad dressing in place of the above recipe. Use other vegetables such as carrots, peppers, cucumbers; add various seeds and nuts; or pasta, grains or rice, putting softer vegetables or fruits near the top. Have fun experimenting, there are numerous options!

Ingredients

Salad Dressing Ingredients:

1/3 cup (100 grams) regular or light Greek yoghurt

2 tablespoons regular or light mayonnaise

1 tablespoon blue cheese

Salt & pepper to taste

 

Salad Ingredients:

½ cup chopped celery

1 tablespoon chopped red onions (optional)

½ cup smoked chicken, cubed

½ cup KORU® Apple, cubed

½ cup seedless red grapes, cut in half

½ cup chopped kale

¼ cup pecan halves

Method:

  1. In a pint jar, put 1-4 tablespoons (depending on your personal preference) of salad dressing. Then layer salad ingredients fairly compact into the jar in above order, starting with the celery and ending with pecans.
  2. Cover with a tight fitting lid and store in the refrigerator up to three days.
  3. To serve, unscrew the lid and shake the salad onto a plate. Add salt and pepper to taste.

KORU® Apple Overnight Oats

KORU® Apples are slow to brown, so can be included when you make this popular nutritious breakfast, and still look fresh the next morning!

For a thicker option, add ½ cup greek yoghurt and reduce almond milk to ½ cup. Add seeds such as sunflower, flax seeds or pumpkin seeds. Add a pinch of cinnamon or other favorite flavoring.

Ingredients

½ cup (40 grams) wholegrain oats

½ cup grated KORU® Apple

1 cup (200 grams) almonds, chopped

½ tsp honey or maple syrup

2 tablespoons cranberries or raisins

2 tablespoons slivered almonds, raw cashews or walnuts

1 cup (250 ml) almond milk

Method

  1. Layer all ingredients in above order in a pint size jar.
  2. Cover and place in refrigerator overnight.
  3. Top with yoghurt and toasted nuts, if desired, for a quick and nutritious breakfast.

Kale & KORU® Salad

Add bacon bits, or for a complete meal add cooked chicken, salmon or prawns!

Ingredients

Salad

8 cups (120 gm) baby kale (or spinach)

2 medium KORU® Apples, cored and thinly sliced

1/2 cup (50 gm) dried cranberries

1/2 cup cucumber, thinly sliced

1 small red onion, thinly sliced


Salad Dressing

1/4 cup extra virgin olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey (or maple syrup)

1 teaspoon Dijon mustard

Sea salt & ground pepper to taste

 

Topping

1/2 cup slivered almonds, pecan or walnut halves, toasted

4 ounces (100 gm) feta cheese, crumbled

Method

  1. Toss salad ingredients together in a large salad bowl.
  2. For the dressing, place all ingredients in a jar and shake to mix well.
  3. Drizzle salad dressing over salad and toss lightly.
  4. Sprinkle with almonds and feta cheese over the top.
  5. Salad should be served shortly after adding dressing.
