KORU® Waldorf Cups

Servings: 10-12

Recipe supplied by: McGrath Nurseries "According to Wikipedia, The Waldorf Salad was first created between 1893 and 1896 at the Waldorf Hotel in New York City. Here’s a little twist serving the salad in lettuce leaves. These can be served as individual salads or appetizers. KORU® Apples are slow to brown, so you can prepare your salad ahead of time and store in the frig for several hours before serving, without using preservative on your apple!"

For a bit of difference, add crumbled blue cheese, shredded cheddar cheese, cooked diced chicken or bacon bits.

Ingredients

Salad:

1 KORU® Apple, cored and diced

10-12 Cos lettuce leaves, separated and rinsed

2 ribs celery, sliced thin

2 green onions, sliced thin (optional)

½ cups grapes, halved (or ¼ cup raisins)

½ cup walnuts, toasted

 

Dressing:

½ cup light mayonnaise or nonfat yogourt

1 teaspoon honey

1 tablespoon lemon juice

1 teaspoon lemon zest

2 sprigs parsley, chopped, plus some for garnish

A pinch of ground nutmeg

Salt and pepper to taste

Method

  1. In a small bowl, stir together salad ingredients. Set aside for flavors to blend.
  2. In a medium bowl, mix all salad ingredients together except for lettuce leaves and toss with dressing.
  3. Spoon salad ingredients into lettuce cups.
  4. Garnish with parsley.

Rachel's KORU® Apple Snack

"We enjoy having random snacks. This particular one is popular in our household. Crispy Organic KORU® Apples with my homemade Organic Quince Paste accompanied with local Organic Fenugreek Goats Cheese on a Plain Cracker topped with some fresh Organic Mint. Very refreshing. Of course one isn't enough!"

Ingredients

Crispy Organic KORU® Apples, sliced in rounds and cored

Organic quince paste

Organic Fenugreek goats cheese

Fresh organic mint

Plain crackers

Method

  1. Slice the KORU® apple in rounds...remove the core from the centre.
  2. Place the quince paste into the space where the core was, then layer with the goats cheese and top with a sprig of mint.
  3. Quick and simple to prepare, which is handy in everyone's busy lifestyles of today!
  4. Enjoy.

KORU® Apple & Fennel Salad

Preparation time: 20 minutes 
Servings: 6

 For a non-vegetarian version, toss some crumbled bacon on the top!

Ingredients

1 KORU® Apple, cored and thinly sliced

1 Medium fennel bulb, quartered and thinly sliced (Best to do with a mandoline)

6 cups (about 100 grams/6 ounces) baby spinach or mesculin

Dressing

3 tablespoons extra virgin olive oil

1 tablespoon cider vinegar

1 teaspoon dijon mustard

1/2 teaspoon honey

Sea salt and fresh ground pepper to taste

Topping

A handful of fennel fronds

1/3 cup (50 grams) crumbled blue cheese

Method

  1. In a small mixing bowl, whisk together salad dressing ingredients. 
  2. Gently toss sliced apples and fennel with the salad dressing mixture.
  3. Place greens in a salad bowl or on a serving platter.
  4. Scatter apple and fennel mixture over the salad greens.
  5. Serve sprinkled with crumbled blue cheese and fennel fronds.

Hummus with KORU® Apple

Preparation time:  10 minutes

Servings: 4

For a sweet/savoury option, add ½ grated apple, 2 teaspoons honey or maple syrup, ½ teaspoon ground cinnamon, and ¼ teaspoon ground nutmeg.

Ingredients

2-4 KORU® Apples, sliced

Hummus:
1 can chickpeas (390 grams), drained, reserving liquid
2 tablespoons extra virgin olive oil
2 tablespoons tahini or peanut butter
1-2 cloves garlic, peeled and crushed
2 tablespoons lemon juice
½ teaspoon salt (to taste)

¼ cup pumpkin seeds for topping

Method

  1. Blend all hummus ingredients in food processor until smooth, adding reserved liquid from chickpeas until desired consistency.
  2. Spoon hummus into small bowl and sprinkle with pumpkin seeds.
  3. Yields 1 1/2 cups hummus.
  4. Serve with sliced KORU® Apples, carrot sticks and crackers.

KORU® Apple Sandwich

Experiment with different ingredients for your favorite eating experience! Wrap them up for a healthy lunch sandwich!

Ingredients

1 medium KORU® Apple

Your choice of the following filling combinations for each sandwich:

Nut butter, Cranberry & Coconut

1 tablespoon Almond or ABC Butter

1 teaspoon coconut

1 teaspoon dried cranberries

Cinnamon Spiced Hummus & Seeds

1 tablespoon hummus

1 teaspoon pumpkin or sunflower seeds

A sprinkle of cinnamon

Peanut butter, Oats and Chocolate 

1 tablespoon peanut butter (chunky or creamy)

1 teaspoon mini chocolate chips or chopped chocolate bar

1 teaspoon oats or granola

Method

  1. Cut the apple into thin round slices and then core with an apple corer or paring knife.  A mandoline works well to cut the slices evenly (about 1/4 inch/.5 cm)
  2. Spread nut butter, peanut butter or hummus on half of the apple slices.
  3. Sprinkle with dried fruit, coconut, nuts and/or seeds from your favorite flavor combination.
  4. Top with remaining slices to make your KORU® Apple sandwiches!
  5. Makes 4-5 sandwiches depending on the size of the apple and the thickness of the slices.
