KORU® Apple Tarts

Recipe supplied by: Sandi McGrath "When I was growing up, my mom would make pies and we would use the extra pie dough to make jam tarts. Here’s a version using KORU® Apple filling, AND I added the sugar glaze. These would be way easier to take on a picnic than a pie! No plates or forks needed!"

Apple pie is always better served with ice cream!

Ingredients

Pie Crust (or you can use your favorite pie crust or purchased refrigerated pie dough)

3 cups flour

1 cup vegetable shortening (Crisco)

Salt

Baking powder

8 tablespoons ice cold water

 

Apple Filling

2 KORU® Apples, peeled, cored and diced

3 tablespoons butter

¼ cup white sugar

2 tablespoons brown sugar

½ teaspoon ground cinnamon

A pinch of ground nutmeg

1 teaspoon corn starch/corn flour

 

Glaze

¾ cup powdered sugar

2 tablespoons milk

A couple drops of vanilla

Method

  1. Preheat oven to 400f/200c.
  2. For the pie crust, mix dry ingredients, cut in shortening and lightly mix in water until dough comes together. Roll in a ball, cover with plastic wrap and store in refrigerator while making the filling.
  3. For the apple filling, in a medium saucepan lightly brown butter, stir in apples then mix in the remaining ingredients (except corn starch) and cook, stirring occasionally, about 5 minutes.
  4. Add 1 teaspoon corn starch and cook and stir about 1 minute longer until mixture starts to thicken. Remove from heat.
  5. Stir together glaze ingredients until smooth. Cover with plastic wrap and set aside.

Assembly

  1. To assemble the pies, take golf-ball size pieces of pie dough and roll into a circle about 6 inches round, trimming edges even using a plate or lid as a guide.
  2. Fill each circle with ¼ cup apple filling, fold the dough over and pinch edges with a fork. 
  3. Cut 3-4 vent holes in the top and put on an ungreased baking sheet.
  4. Bake about 15 minutes until pies are golden brown.
  5. Cool slightly and brush with glaze when still warm.

Mom's KORU® Apple Pie

Cooks in: 50 minutes

Servings: 6-8

French Apple Crumble Crust option: Prepare pie as above omitting margarine and top crust. Mix 1 cup (150 grams) flour, ½ cup (120 grams) firm margarine or butter and ½ cup (100 grams) brown sugar until crumbly. Cook as directed above.

Ingredients

Pastry for one 9-inch pie

6 cups (Approximately 4) KORU® Apples, peeled and sliced

½-¾ cup (115-175 grams) sugar

¼ cup (38 grams) flour

½ teaspoon ground nutmeg

1 teaspoon ground cinnamon

2 tablespoons margarine or butter

Dash of salt

 

Method

  1. Preheat oven to 425f (220c)
  2. Prepare pie pan with bottom crust
  3. In a large bowl, mix sugar, flour, nutmeg, cinnamon and salt. Toss with apples.
  4. Turn into pastry-lined pie plate. Dot with butter or margarine.
  5. Cover with top crust that has slits in it; seal and flute.
  6. Cover edge with a strip of aluminium foil to prevent excessive browning; remove foil during last 15 minutes of baking.
  7. Bake 40-50 minutes until crust is brown and juice.

Pam’s KORU® Apple Crisp

Cooks in: 30 minutes

Ingredients

4 KORU® Apples, cored and sliced

1/2 to 3/4 (100-150 grams) cup brown sugar (depending on how sweet you want it)

1/2 (75 grams) cup regular flour

1/3 cup (80 grams) butter, softened

1/2 to 3/4 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

Method

  1. Preheat oven to 375 f (190 c).
  2. Grease a 8 x 8 inch pan.
  3. Place apples in pan.
  4. Mix remaining ingredients and sprinkle over apples.
  5. Bake 30 minutes OR until apples are tender and top is golden.

KORU® Apple Fruit Rolls

Preparation time: 10 minutes

Cooks in: 8-10 hours

Servings: 2 servings per tray

Add 1 cup fresh or frozen berries to KORU® Apple sauce! Spice it up with cinnamon! Spread fruit roll with soft cream cheese or nut butter and roll up for a nutritious snack!

Ingredients

1 1/2 cups KORU® Apple sauce per tray

Method

  1. Cover dehydrator tray with cooking paper
  2. Spread 1 1/2 cups KORU® Apple sauce evenly with rubber spatula to 1/4" (6mm) thickness (make sure it is not too thin or it will get crunchy)
  3. Set dehydrator temperature at 135F (57C) and dehydrate for 8-10 hours
  4. When ready, the fruit should be smooth, not sticky, and peel off the trays easily
  5. Cut to desired lengths with kitchen scissors
  6. Roll and tie with twine 
  7. Store in an airtight container or wrap with plastic wrap

If you do not have a dehydrator, the drying process can be done in the oven at 135 for 8-12 hours. Spread the applesauce on a metal oven tray covered with cooking paper.

Muesli & Dried KORU® Apple

Preparation time: 15 minutes
Cooks in: 15 minutes 
Servings: 8 cups

Add or substitute other nuts and seeds. Serve with fresh berries or fruit that is in season!

Ingredients

4 cups wholegrain oats
1 cup coconut chips
½ pumpkin seeds
½ cup sliced almonds
¼ cup sunflower seeds
¼ cup honey or maple syrup
¼ cup grapeseed, rice bran or sunflower oil
1 teaspoon ground cinnamon
½ cup dried cranberries and/or raisins
1 cup dried KORU® Apples

Method

  1. Preheat oven to 350F (180C).
  2. In a large mixing bowl, combine oats, coconut, seeds and nuts.
  3. In a small bowl, combine honey or maple syrup, oil and cinnamon.
  4. Pour liquid mixture over oats and stir until well coated.
  5. Line a baking pan with baking paper.
  6. Spread mixture in pan and bake for 10-15 minutes, stirring occasionally, until lightly toasted.
  7. When cool, add cranberries and KORU® dried apples.

Store in an airtight container up to 2 weeks.
