Marilyn's KORU® Apple Cake

Ingredients

Cake

1/4 cup (60 grams) butter

1/4 cup (60 grams) sugar

1 egg (beaten)

1/2 cup (75 grams) flour

1/2 teaspoon baking powder

1 KORU® Apple peeled and sliced

 

Topping

1 tablespoon of sugar

1 teaspoon of cinnamon

Method

  1. Preheat oven to 375 F (190 C)
  2. Cream butter and sugar
  3. Sift flour and baking powder and add to creamed mixture alternately with the beaten egg
  4. Pour into a greased dish
  5. Place sliced Koru® apples on top of the batter mixture
  6. Combine 1 tablespoon of sugar and 1 teaspoon of cinnamon and sprinkle over the apple
  7. Bake for 40 minutes

Ginny's KORU® Apple Cake

Cooks in: 1 hour plus cooling time

Ingredients

Cake

3/4 cup (185 grams) butter

3/4 cup (175 grams) sugar

1 tablespoon baking powder

3 eggs

3/4 cup (115 grams) flour

3 drops vanilla essence

2 large KORU® Apples peeled, cored and sliced into 16 segments

 

Topping

1 tablespoon brown sugar

1 teaspoon cinnamon

Method

  1. Preheat oven to 375F (190C)
  2. Cream butter and sugar, beat eggs until light and thick
  3. Add alternately with sifted flour and baking powder
  4. Press apple slices into a circular design, thickly onto mixture till all is covered
  5. Mix and sprinkle with cinnamon and sugar topping mixture
  6. Bake for 1 hour
  7. Once cooked, let the cake cool for 10 minutes
  8. Cut into wedges and serve

KORU® Dried Apple Rings

Cooks in: 6 to 8 hours

Dry your apples with no spice, or experiment substituting other apple-friendly spices such as cloves, ginger and nutmeg!

Ingredients

1 medium size KORU® Apple per tray

Method: Using a dehydrator

  1. Wash, core & peel (Optional - I don't peel) KORU® Apples
    (Approximately 1 medium size KORU® Apple per tray)
  2. Slice apples thinly and evenly (1/4 inch)
    (Using a mandolin slices the apples easier and makes for more consistent drying time)
  3. Arrange apple slices on dehydrator trays
  4. Sprinkle lightly with cinnamon
  5. Set your dehydrator at 135F (57C) for 6-8 hours 
    When done, apples should feel dry and leathery with no tackiness. 
    Let apples cool at room temperature; then store in airtight bags or containers.
    These will last for several months if stored in a cool, dark place.
    For longer storage, seal in vaccuum packs and store in the freezer.

Method: Using an oven

  1. Preheat your oven to 200F.
  2. Line a metal baking pan with parchment/cooking paper.
  3. Arrange apple slices in a single layer and cook as above.
